Longtime favorites like The Hat, known for resisting out-of-state growth for decades, now signal a larger trend of Golden State transplants catering to a growing population of former Californians. Established in 1951 as a roadside stand in Alhambra, California, The Hat built a loyal following across Southern California with its towering pastrami dip sandwiches. The chain, now family-owned with 11 locations, maintained a strict no-expansion policy outside the state until now. Construction has begun at 6215 South Rainbow Boulevard near Sobb Avenue in Spring Valley, marking the brand’s debut in Nevada.[3][2]
Visitors can anticipate the signature “World Famous Pastrami,” chili cheese fries, and Orange Bang, a citrus-vanilla drink introduced in 1971. The 4,122-square-foot space will feature a drive-thru and outdoor patio for convenience. Hiring for roles like cashiers and cooks started recently, with a job fair held March 11 through 14, pointing to a spring 2026 opening. A prior attempt at the site six years earlier fell through, heightening excitement for this revival.[4][1]
